Koyadofu and Pan-simmered shredded beef, broccoli and carrots

Koyadofu is freeze-dried tofu and when simmered in dashi soup it has sponge like texture. It is my husband's and my favorite vegetarian dish. Pan-simmered shredded beef and vegetables are flavored by sake, sugar, oyster sauce, soy sauce and sesame oil.
